Pacharan Bibatio
Pacharan Bibatio is a sloe-flavored liqueur commonly drunk in Navarre and the Basque Country, the Pyrenees and elsewhere in Spain. It is usually served as a digestif either chilled or on ice. Patxaran is made by soaking sloe berries, collected from the blackthorn shrub, along with a few coffee beans and a cinnamon pod in anisette. The color is an intense red, with brightness showing youth. For the nose, neither the sloes nor the alcohol scents stand out. Bibatio has a fruity bouquet with a light undertone of anise alcohol. Texture is soft and the taste sweet, through not in excess.
